Lamb Fattoush

Fattoush is a Middle Eastern salad that uses up any leftover or stale pitta bread. I’ve added some cubed lamb to make it a slightly meatier dish that’s more of a meal than a salad, but you can have it without, or swap the lamb for another kind of meat. Feel free to use a different selection of vegetables here too.

Preparation time: 10 minutes

Cooking time: 20 minutes

Serves: 1

1 pitta bread, toasted and torn into small strips

150 grams (handful) of cubed lamb

1⁄4 cucumber, chopped

6 to 8 cherry tomatoes, sliced in half

1⁄4 red onion, peeled and finely chopped

Bunch of fresh parsley, finely chopped

Olive oil

1 Heat the grill to full power. Place the cubed lamb underneath and grill until brown on all sides and cooked all the way through (about 10 minutes). Check by cutting one of the thickest pieces open and seeing if the juices run clear.

2 While the lamb is grilling, mix all the other ingredients in a bowl except for the olive oil.

3 When the lamb is cooked, add it to the other ingredients in the bowl, mix well and drizzle with olive oil.

4 Pour onto a plate and eat.
